Humans have a 180 degree horizontal field of vision, but only 135 degree vertical FOV. Why?

I've seen a few videos I thought were more appropriate shot vertical. Like on of a pinball
machine caught in an endless loop. Why would you shoot that horizontally? Why waste the very few
