"You're mad" means "You are mad", it implies the subject you are currently speaking to is angry
and/or agitated.
"Your mad" implies possessiveness, as if "mad" is a tangible object you could hold in your hand.
For example if I had a food called "mad" and you ordered some, I would hand it to you and then
say "Here is your mad you ordered sir."
Since "mad" isn't usually an object, "You're mad" would be the proper spelling for almost all
situations.
