  Veggie chili -
  Cheap beans, Chicken thighs,some seasoning and a bag of white rice and you gon' be set

  Canned Stuff (measurements don't need to be exact,you just don't need the giant cans thas all)
  15 oz canned diced tomato
  15 oz Kidney beans
  15 oz Black beans (with seasoning is fine)
  15 oz Red beans
  (substitute any bean for whatever you want)

  If you have Recaito mix or sofrito available to you I recommend a few Tbsp of that as well
  (can be found in the international section of most stores, look for the goya stuff )

  Fresh stuff
  4 garlic cloves
  1/2 Large white onion
  Juice of 1 Lime
  cilantro
  Colby jack for topping
  2 lb chicken thighs

  Frozen stuff:
  Peas
  Carrots
  Corn
  Broccoli

  Whatever you want really

  Spices:
  Chili powder 3 - Tbsp
  Cumin - 1 Tbsp
  Paprika 2 - Tsp
  onion powder 1 - Tsp
  cayenne 1 - Tsp

  (I won't hate you if you use a pre-made fajita/chili seasoning mix)

  Pretty simple...
  Diced up some cilantro
  Open cans of beans, and drain the excess water
  Mince garlic and onion
  Add oil to a hot sturdy pot
  sweat 'em out
  add tomato and some sofrito and/or recaito
  let the tomato simmer a bit
  Dump in seasonings
  sprinkle in some cilantro
  Stir about
  Add beans
  Stir
  Microwave the frozen stuff you plan to add to and strain off any excess water from the microwaving
  dump em in
  Stir
  Reduce to simmer and let simmer at least 1 hour stirring occasionally
  adding some water if it starts to look dry

  You'd have to be retarded to not be able to make this

  For the chicken I recommend waiting until your ready to eat and have it cooked separately so it
  has it's own flavor
  Season chicken thighs using some combination of the aforementioned seasonings and some salt
  Med-High pan
  oil
  3-5 per to crisp
  bring heat to med
  Add a splash of water and cover for 5 min

  cook rice according to directions or in a rice maker or whatever

  Place in bowl in this order -> Rice -> chili -> chicken -> Cheese -> salsa -> cilantro
  Serve with jiffy boxed cornbread and a coke (rum optional)

  The chili recipe is solid... but I require my carne.
  4th of July, visited my folks, and we made a rather international spread; pernil, arroz con
  gandules (with scotch bonnet peppers), yuprik (Pontic Greek dolmas), and German style (white)
  potato salad. Snacked on Middle-Eastern dried fruits (figs, dates, apricot qamardeen).
  The yuprik is steamed with chicken parts in the boil, and the 'used' chicken went great with
  Jamaican jerk sauce the next day in flour tortillas with sour cream.

  I must have put on 5 pounds in the past week.
