I came here for work but my phobia of public spaces keep me from flying back to the east coast. someone told me to try and trace my steps back to the last time I felt even a little happy. So I came back here. I can't shake the feeling that nothing will cure me of my nostalgia sickness; nostalgia for something I can hardly even remember. If I did remember it clearly would I even be nostalgic? What are your thoughts on nostalgia /f/rens -------------- Anyways, enough blog posting Food: GYOZA BURGER: Typically feeds 2 - 4 Easily doubled for larger groups. EGG - 1 GREEN ONION - 3 (or more) GINGER - 1 Thumb (1-2" Knob) GARLIC - 3 cloves (AT LEAST) ONIONS SAUCE - 2 Tbsp MIRIN - 1 Tbsp SHIITAKE MUSHROOM - 1 CUP SEASONED RICE VINEGAR - 1 Tbsp SESAME OIL - 1/2 Tbsp (or more to taste) SUGAR/HONEY - 2 Tbsp (don't use flowery honey) BUNS - 4 PORK ~400-500g (Aims for 4 ) PANKO- 1/4 cup (scale up to 1/3 if you are closer to 500g of pork) COLESLAW (RED CABBAGE/ KIMCHI STYLE) - As a topping Sauce: SUGAR/HONEY - 2 TBSP MIRIN - 1 Tbsp ONIONS SAUCE - 1/4 CUP RICE VINEGAR - 1 TBSP CRUSHED/FINE CHOP GINGER - 1-2 TBSP (GOUCHANG IS ALSO GOOD HERE) HOW DO: Soak or steam mushrooms, drain/pat dry and move to food processer. add garlic, ginger, onions sauce, mirin 1/2 of the sugar/honey, sesame oil, vinegar blend that shit if you don't have a processor this can finely chopped (won't bind as good but it works) Take paste and add it to bowl Plop pork in and combine thoroughly add egg add panko in parts slowly working it in and stopping when the mixture is pliable and holds form if you have extra panko do not add it as it will make the burger dry. Combine ingredients for sauce in a bowl and stir come combine Cook burgers on griddle or grill until done (160F) Assembly: Bun->(mayo if desired) Burger->Slaw->Sauce->Bun-> Eat Pair with bright beers, mirin or light and fruity cocktails.

Part of nostalgia is glossing over the worse parts of your memory, if you have something that reminds you of times you enjoyed it's not the worst thing to indulge it. Ultimately our time here is short, it doesn't make sense to spend it any other way than taking pleasure in what you can. Whatever you do, /f/ will always be there. We're here forever after all.
