Fly directly into them and shoot then fly the fuck away before you collide with the ship. Trust me
Or just keep looping around them and shooting when you line up

The big ships only shoot multiple shots in a straight line, so direct their fire with your
movement and move around the beam. You can cut between shots if you're fast but don't try it if
you're low on health.
Other than that, shoot them until they die.
