It's seriously not hard to get 99 humanity. Spend an hour farming skeleton babies or those
humanity ghosts in the DLC while wearing the gold serpent ring.
If you ever do any kind of PvP, you'll want lots of manatees, since they're a much better healing
item than estus (especially since phantoms can use them, too).

A couple easy ways, before the expansion the earliest area was the sewers, where you could farm
rats for humanties.
The baby skeletons in front of Nito's room was also a good spot but you needed to have placed the
lord vessel in Anor Londo so that was later in the game.
Post-patch/PC edition makes it even easier with the giant humanity enemies and their decent drop
rate.
And of course there's always pvp.
