You saw End of Evangelion, right? Because that's the "real" ending, not the last few episodes of
the series.
Rebuild 1 is just an HD remake of the first few episodes
2.0 starts to deviate from the show. Shinji and Rei get some nice development, and Shinji
actually starts to man the fuck up. I really love it.
With 3.0, you can tell they stopped giving a fuck entirely. There's a timeskip for no good
reason, all the characters lose their development from 2.0, the plot goes entirely off the rails.
It's very divisive, some people (read: plebs) like it, others hate it.

You thought EoE was terrible? Even if you didn't "get" it, Asuka's fight and TUMBLING DOWN,
TUMBLING DOWN were pretty great.
Rebuild isn't exactly a remake. It's more like an alternate continuity. Some theories say it's
actually a continuation of the original series, there's some evidence to support it, but we're
really waiting on the 4th movie (not that that will explain anything)
Like I said though, the first movie is identical to the show, almost shot-for-shot. The second
starts to deviate and do its own thing, while still mostly staying true to the story. The third
goes batshit insane.
