How do people match the pitch of songs in videos like this? Do they make it by ear in an editor
or do they use a certain program?

Vegas works pretty good for this sort of thing. You just loop each note and press + and - to
change the pitch until it matches the source. Or maybe thats a different program... it's been a
while.

Basically, you find the key of the sound, assign it to that key in a synth program, then feed in
the MIDI file, and the program will output ths kind of gloriousness.
