Actually there's science behind that. Many nutrients are water soluable. Boiling them for a long
time (or otherwise leaving them soaking) can leech those nutrients out. It's part of the reason
you should boil dried beans in the same water you soak them in.
But it's also true that cooking vegtables helps make them more palatable and digestable,
particularly for fibrous veggies or dense greens.
Your best bet for cooking in general are methods like rosting, sauteeing, or streaming, rather
than boiling or braising.

Yea, that's asking for some giant fucking asterisks around every claim I managed to make it
through. Boiling is less healthy because it breaks down complex nutrients like Vitamin C. It
"releases" more beta-Carotene because it completely destroys the food's cell walls, and other
nutrients along with it.

No. You soak beans solely so they'll cook more quickly.
That's it. Only reason.
There's no way soaking beans can make you ill. Unless your water or your beans were already going
to do so. I would recomend you rinse your beans in a collander first, before adding clean water
to soak, but that's my only caveat.

I agree about unpalatable, but toxic not so much. You can cook dry beans, but they take longer
and taste different.
