There are actually some fan made animes
A Summer Day's Dream (not very good animation)
https://www.youtube.com/watch?v=V5qh2MhJyA4
Memories of Phantasm (better animation)
https://www.youtube.com/watch?v=2qLtwP6fPGE
And the most recent one (without voices):

Am I spoonfeeding? Well, fuck you all.

thanx anon this explains so many things... how such character development came about, such good
quality graphics for those characters, and general backstory. I always wondered how touhou
characters got such a following from the few low quality games I saw.

Most people I know come for the games (they're actually really fucking good, even if the art is
shit) or music, and then stay for the characters and fan stuff.

ZUN has a knack for making a really interesting world and setting up good framework for
characters (and is also great at making music) and it really encourages the fandom to run with it.
Honestly, most of the character development in the fan-anime is stuff that the fans already made
their own little canon.
The best part is that a lot of the stuff fans come up with ends up coming back around into
actually being canon in future games. Dude pays attention to his massive fan base.

I don't mean to be spoonfed but are there any that stand out in your mind? links?
I appreciate everyones input on this subject, didn't know artists name or that he reintegrated
fan favorites to canon.. could explain why they are so popular... can't really get this info from
the outside looking in. or just seeing a few flashes.

My personal favorite games are Perfect Cherry Blossom (Touhou 7), Subterranean Animism (Touhou
11) and Legacy of Lunatic Kingdom (Touhou 15). I really do love most of the games in the main
series, not so much of a fan of the fighting game spinoffs.

Here you have a compilation of almost every group that remixes touhou music (in mp3 format):
http://otokei-douj.in/
For the full 1.35TB of Touhou music, look for http://www.tlmc.eu/
And about games, I agree with >>3067091 , PCB is one of the hardest ones, SA had a nice bomb and
special ability system, and LoLK has the possibility to be beaten by almost everyone without much
skill (just time) using the pointdevice mode.
Double Dealing Character (Touhou 14) have some cool boss mechanics, like Seija or Sukuna.

DDC also had the great mechanic with the point-of-collection spawning bomb/life pieces, made for
some really interesting dynamics.
