Stuffed Shells?
Sure why the fuck not.
So this'll work with manicotti as well I just find the jumbo shells easier to fill.
15 oz ricotta (425g)
16 oz shredded mozzarella divided into two parts.
2-3 eggs more eggs = more firm filling when baked
Pasta shells/manicotti
24 oz Red sauce (pretty much anything but marinara works)
1 small onion
3-4 cloves garlic
olive oil
Chicken 2 boneless skinless breasts
Salt + Pepper
garlic powder
"Italian seasoning"

Pre-heat oven to 350
Set a large pot of water on to boil pasta following whatever instructions came with it
In a large bowl combine
ricotta
8oz of mozzarella
eggs
Add 2 Tsp garlic powder (more if you want it more garlic-y) I just kinda eyeball it
Salt pepper to taste (I usually stop when the pepper can be seen throughout when mixing)
Set in fridge to cool while working on chicken
Dice up onion and garlic
Filet chicken or if your not about that, hammer it thin
Liberally coat with Italian spice, salt pep to taste and rub with a bit of olive oil
Add a splash of olive oil to a medium high pan
Add onion and garlic toss until coated
Add chicken, and cook 3-5 min per side enough to get a nice color
Remove chicken and place in oven safe dish
Set in oven with a splash of red sauce over top to keep moist
Keep all them pan drip'ns add sauce to this and instantly improve canned sauce flavor
Get the riccot/mozz mix
Take strained shell/manicotti and fill with 1-1 1/2 Tbsp mix
Layer in 9x13 repeat until you run out of room pour extra cheese on top of them
Add sauce to coat sprinkle the other 8oz mozz ontop
bake for 20-25 min or until cheese onto has nice golden brown spots and is all bubbly and good.
(You can cut up the chicken and bake it in with the pasta but I normally just serve it on the
side with 1 breast filet and 2-3 shells per plate)
Serve with Italian bread and wilted asparagus tossed in butter and garlic
maybe even Merlot if you want to feel classy
