In actual modern stroganoff recipes, you sometimes coat the meat (beef, pork or even lamb) in
flour and sear it for colour and extra flavour.
some recipes involve paprika (powder) as a spice, I've seen restaurants use roma tomatoes and
even small amounts of pickles to further add to that tangy-hearty thing/
That amount of milk milk is retarded, A bit of heavy cream with fond or stock is usually the
sauce base.
onions and mushrooms are essential imho and form the base of most contemporary -stroganoff style
dishes.
