5lb bag yukon gold
1/2 - 1/3 Cup butter (2 sticks)
1/2 Cup milk
salt and pepper
2-3 Tsp garlic powder
Toppings
chives / green onion
Cheese for toppins
cheddar, colby w/e you got around
Peel potatoes core out any nasty bits
Cut taters into 4ths or slices whatever works for you
Bring a large pot of water and 3 Tbsp salt to a boil
check tenderness with for every five or so min
As soon as you can push through one with relative take them off the heat cover and let sit for 10
or.
If you used yukon golds the waxyness of potato will prevent it from turning to complete mush and
letting them sit like this helps ensure that although heavier than russets they can still be
fluffy.
Drain 'em ( I like to just crack the lid a bit and pour keeping them in the pot)
If you have a masher get started on them bois
If you have a potato ricer do that
If you don' eithert get a large spoon or fork and start breaking them up
Add butter and stir until mixed
Add milk in small parts you may not need all of it you may need more just depends
Add spices (I normally just go with some garlic powder, maybe a touch of seasoned salt)
Set oven to 500/broil whatever max you got
Keep mashing/mixing
If you have an electric beater you can speed the whipping process up
If not, your going to have to work harder for them smooth taters
After whipping force mix through a sieve for extra smoothness
Top with cheese and set in over for 2-3 min until cheese is bubbly
Top with chives and sour cream
