  Frying Pan Takoyaki

  I don't have a lot space for silly gadgets in my kitchen so buying a specialty pan was a no for
  me.
  When made in a pan the takoyaki is more a big fluffy pancake thing? Its good drunk food since its
  meaty, fried and bread-y all at the same time.

  Batter -
  2 cup Dashi (chicken stock in a bind)
  1 tsp soy sauce
  1/4 tsp salt
  2 eggs
  1 1/4 cup flour
  (You can also buy mix from a store I won't judge)

  Fillings:
  some picked ginger diced up
  finely chopped green onions
  8-12 oz octopus chopped or shrimp (de-veined and cleaned) - I prefer shrimp ham works for a more
  breakfast style
  oil for pan

  Toppings:
  bonito flakes, tempura flakes, dried seaweed
  (I like sweetened soy and some toasted sesame seeds)

  Sauces:
  Takoyaki and Okonomiyaki sauces and a must (Otafuku is pretty widely available in most grocers)
  Spicy mayo - its just mayo and sriracha mixed together...

  Mix the dashi, soy sauce, salt, flour and eggs in a bowl and whisk to combine.
  Heat up a large frying pan, coat with oil and let the oil get fairly hot. If its smoking it is
  too hot and will taste like shit.
  Bring the pan to a high medium
  Pour batter in pan coating the pan using most of the batter
  Sprinkle in toppings and if there is any batter left pour that over
  cover and let that cook for at least 4 min checking the sides for a nice golden crust

  this part scares the shit out of me every time.
  Flip the entire fucking
  If you fuck it up just kinda mash it back together...its not going to be pretty the first time

  Really this is just complicated pancakes but once you do it a few times it becomes pretty easy

  Remove from pan, if your going to need a min to get sauces ready place it on a paper towel on a
  plate so it doesn't get soggy.

  Please forgive me if this makes less sense than usual I'm off my ass on cough medicine.

  Lemons is unironically one of my favorite songs of all time senpai, that one is utter perfection,
  the right amount of loop and variation with the vocal samples to spice things up

  I'm not saying use more vocal samples, but if you do, Lemons is a textbook perfect example of how
  to use it.
