Someone at some point asked for a tomato soup recipe. So I went and dug it up...here you go if
your still around.
Things seem "active" lately
So that's cool.
Tomato basil soup
28 oz of canned peeled tomato
OR
8-10 smaller tomatoes roasted
(cut in half remove some of the thicker parts and some seeds, broil with tomato on bottom shelf
for 15-20 min cool a bit and lift skin off) weigh out roughly 28 oz once done
2 Tbsp Butter
2 Tbsp Olive oil
1 Large sweet onion
4 Cloves garlic
1 Tbsp Spicy Italian mix of some sort (something with chili flakes)
1 tsp Oregano
1 tsp Balsamic vinegar
Salt and pepper to taste
1-2 Tbsp sugar (cuts acidity a bit skip if you like that sort of thing)
2 cups Chicken broth or veg broth
3/4 Cup heavy cream
4-5 basil leaves chopped and with stems removed
To medium heavy bottom pot, on medium, add oil and butter along with onion and garlic.
Cook until onions become slightly transparent
Add a pinch of salt and pepper and add tomatoes
Bring heat up a touch and break up tomatoes
Add all spices but the sugar
Lower temp to low, simmer for 30 min stirring occasionally
After simmering run an immersion blender or mash with potato masher or transfer to blend to puree
(transfer back to first pot when done)
After pureeing stir in stock and bring to a medium boil
Lower temp to simmer and wait 5 to add cream
Taste for acidity and salt
I add at least tsp back pepper
Add sugar if too acidic if needed
Add more chopped basil on top
Add shaved parm
