isn't it weird how anime has "evolved" and no studio draws in this style anymore?

It's a generational thing. The industry, at any given time, has a bunch of workers from the same
schools from around the same time. Peers influence peers, and the "ideal" aesthetic it chased by
multiple studios.
An example of a new studio doing it's damnedest to recreate an older anime style would be
Megaloboxing, which is basically "not Cowboy Bebop".

there was nothing wrong with the old style tho so still weird that someone drawing anime for 10+
years all of a sudden went "guess we'll just mimick this other style now"
