doughnuts and bagels are similar but different. i'm no expert so here's someone else breaking
down the difference:
Doughnuts are deep fried dough products that are traditionally sweet. They can be light and bread
like or heavy and cake like. They are often either dusted with sugar, filled with jelly or cream
or coated with glaze or frosting. The outside of the doughnut gets a nice crisp texture and the
inside is hot and soft. The oils sear the outside leading most varieties to not absorb as much
oil as would be expected. The oil is very hot and the dough is fully cooked to the center when it
leaves the fryer.
Bagels on the other hand are almost exclusively made from a heavy yeasted wheat dough. They are
first boiled then baked until crisp on the outside which causes much of the dough's moisture to
remain sealed inside. Boiling the dough also causes the crust to be set while the interior is
still uncooked. When the bagel is then baked the dough can not rise as much as other breads
because it is constrained by the tight chewy exterior that has already set. Bagels have a chewy,
moist and heavily doughy interior.
