Its more tactics than strategy, but that's just semantics.
Hold choke points, don't over extend. Let your opponents fight each other. Never attack a dice
pile with an equal amount of dice as you.
The main tip I'll give is that in the early game you want to make one group of territories. If an
isolated territory cant reach your main group of territories in one turn than just leave it,
don't have it attack anything. Having more territories outside your main group just increases the
odds of your end of turn dice being put outside your main group.

Grew up playing Risk
One game of that was like Twilight Imperium, it could literally take over 9 hours just to end in
a stalemate

Admittedly, never is a bit strong. If you're in a really bad situation you may have no choice but
to do it, and obviously things are different once you reach a gamestate where you have
effectively already won. But in general you don't want to avoid battles where you are more likely
to loose. The defender wins all ties, so its not in your interest to attack an 8-dice. Let them
attack your 8-dice with their own 8-dice instead.

That would be true if you were playing against a human of equal skill level, but the AI in Dice
Wars makes plenty of mistakes you can capitalize on. The AI in this is way too aggressive and
overextends constantly. The first 2-3 turns are pretty chaotic, with RNG playing a big factor,
but if you survive through that, even if you're not in a good position, you should be able to win
the vast majority of the games.

Not in this game, git good. Play defensively and you always win.
Sometimes the best move is to just pass your turn, and wait to hear those sweet dings during the
opponent's turn. You should only take risks when you're in a really bad spot and have no other
choice, but that happens pretty rarely.
IDK what else to say, maybe you'll think I'm lying, but my win rate in this game has gotta be at
LEAST 85%, and most of my losses occur withing the first few turns. Its extremely rare for me to
loose a game that goes long.
