You make sets of tiles - either straights or similar tiles. You can with with 3 sets of strights
and a pair, or multiple pairs, or a variety of sets (all 1's and 9's with 3 dragon or wind tiles,
etc).

Chii, Pon, and Kan are basically ways of claiming the tile most recently discarded by your
opponents. Chii is for sequences, Pon is for three of a kind, and Pon is for four of a kind
(kinda special, that one, but the game handles all the details).
If you do one of those moves, then you get the tile, and the set it completed will be unconcealed
and placed to the side of your hand, effectively locked in. Then you discard a tile, and play
continues as if you had finished up a normal turn.
Riichi is a special kind of gamble you can make, when you've one tile away from completing your
hand. If you Riichii, then after you discard, the rest of your hand is locked in, only being able
to discard the tiles you draw from that point on.
