  I used to do this at an old job (DQ) really well, until a customer saw it and complained.

  The note to my boss went something like this;
  "While impressive, and certainly with skill, one of your cooks is playing the handchop game near
  the ingredients, and while he never cut himself, if he did the blood would be a major concern for
  all customers"

  Boss was angry at me, to say the least.
