We shared a huge walk-in oven with the bakery (Not SUPPOSED to walk in, but it was floor to ceiling). To bake things, we had racks that were taller than most people that you stacked baking sheets onto. One time, an older mexican woman who worked there was pulling the cart out, and some trays slid off of it and hit her in the face. During the dinner/rush hours there IS no time for cleaning up because there isnt really anyone with specifically that job classification. Everyone switches between what we currently need at any given momment. If you spill something, it has to wait.
