Some off-the-cuff opinions:
-Uncomfortably attractive character designs
a fun and flashy style of action that you don't -tend to see in other mediums
-a track record for really creative genre moshing that, while often leading to really awful
productions, occasionally creates something brilliant (e.g. Ranma 1/2)
-a legacy of incredibly well written and budgeted works during it's golden age in the 80's/90's
(Wings of Honneamise, a lot of Studio Ghibli works), followed by a period of stagnation,
rehashes, and general shitty laziness with occasional degenerate pandering to perverts and pedos
(Konosuba, Super Sonico, [example #3] )

That's like asking for the appeal of French books. It's not a genre.
Besides that, animation just makes things better than live action, anime and manga can often have
really interesting stories, and there's plenty of garbage out there just to make you laugh or
give you a boner, much of which is, at this point, generic, but can still be pretty enjoyable.

It's pure idealism and abstract ideas.
For "real" movies you got to have actors n shit that do what can possibly be done, but even then
there will be errors and performances poorer than what was imagined.
That's not the case with animation. Every frame itself gets created (more or less). Everything
you see on the screen doesn't just happen, it meticulously gets created by the animators and
artists.
You can just have a vision in your head and 1:1 put in on paper, just the way you wanted. Only
money/time will be your limit. Because fuck the real world, we goin' for 100% fantasy.
Apart from that x% of todays movies are CGI effects anyway, so it's just a shitty kind of 3d
anime.
tl;dr: japanese are extremly uncucked and will draw boobs for fun
