  >1 1/3 cup rice flour
  >1/2 tsp baking soda
  >1/2 tsp salt
  >1/2 cup oil blend spread (margarine, "Smart Balance™" spread, etc.), softened (room temperature
  is ideal)
  >1/3 cup granulated sugar
  >1/3 cup packed brown sugar
  >1 mashed banana
  >1 tsp vanilla extract
  >1 cup dairy-free chocolate chip pieces (if "dairy-free" even exist)
  >3 tbsp cocoa powder

  Preheat oven to 375 degrees fahrenheit. mix dry ingredients in a small bowl (flour, baking soda,
  salt, cocoa powder). Blend "wet" ingredients (brown sugar, granulated sugar, mashed banana,
  veggie oil spread, and vanilla) in a large bowl. Slowly pour in dry ingredients into wet
  ingredients, and blend together with an electric beater (alternatively, a sturdy fork works
  fine). When ingredients are well blended, stir in chocolate chip pieces. Scoop out rounded
  tablespoonfuls of the mixture and place each glob on a baking sheet, 12 per sheet. Bake in oven
  for 9-11 minutes. Recipe makes approximately 25 cookies. Enjoy and share with your celiac,
  lactose-intolerant friends without fear of giving them food poisoning.

  Had a downstairs neighbor make these cookies for me. I think she was fond of me but I didn't
  reciprocate in the almost two years we were neighbors. Eventually she had very loud parties every
  now and again with guests that I suspect involved some multiple people lewdness. But we didn't
  ever talk to each other much, and now she's moved away. Hope she's doing well, at least she
  doesn't have to deal with hearing every little move I make living in the apartment right over her
  anymore.

  1 Package dried wide rice noodles
  2 Tbsp veg oil
  4 Large cloves of garlic minced
  1-4 Birds eye/chili of choice seeded and chopped
  1/2 white onion sliced into wedges
  2 tsp fish sauce
  2-4 green onions cut into larger diag. pieces
  1-2 Cups Thai Basil (regular basil will work)
  200g ~8oz of protein
  Shrimp/chicken/beef works best

  -Saucey bits-
  -3 Tbsp oyster sauce
  3 tsp sugar
  2 Tbsp dark onions (thicccer)
  2 Tbsp light onions (you can do 4 if you don't have dark onions but omit the water)
  1 Tbsp water

  Cook noodles of choice however it says too on box/bag and chill immediately
  Start by mixing sauce bits
  Add fish sauce to protein stir to combine (I sometimes add a 1/2 tsp of sesame oil here)
  Get ya wok/pan hot
  Cook garlic and chili for 6-8 min
  Add onion cook until hot (not transparent you want some bite to em)
  add protein
  cook stirring continuously until protein is cooked (this part varies wildly; thin slices of
  prot/shrimps cook in anywhere from 2-5 min depending on thicknessss)
  add green onion chunks, noodles and then basil
  Stir in sauce
  keep stirring for 1-2 min to combine and let sauce reduce a bit
  (if sauce is just not reducing add 1 tsp of cornstarch to 1/4 C water mix well and then add small
  bits of that until a thicker sauce forms.

  Top with crushed peanuts, more basil and pickled chilies
  Pairs well with light beers and rice beers as well as most dry sake

  Pulled recipe from interwebs and wrote it down ages ago. There are many like it but this is my
  own.
  I recommend a wok over a pan in this case since you really need to toss them noodles around.
