I was a Win 7 holdout for a very long time, and I'm glad I waited because Win 10 was not good early on, but now (with LTSC) it is very good. Requires some work in turning off things for privacy but it's good. You can go even more bare-bone than LTSC but then you have to venture outside Microsoft's official releases: https://ameliorated.info/ I've not really researched Windows 10 Ameliorated though so I don't know if it's trustworthy, before installing it I'd suggest making a couple of threads on /g/ and searching around for information.
