Extra: More butter for pan frying 1 sweet onion for sautéing more sour cream for topping chives or spring onion for topping Dough: 2 cups AP Flour 1/2 teaspoon salt 1 egg 1/2 cup sour cream 4 tablespoons butter (warmed) Mix together flour, salt and egg. Dough will be lumpy Stir in sour cream and soft butter work until smooth and silky. keep working the dough gently until smooth and kind of shiny. Form a ball / balls (lol) and wrap tightly in plastic wrap. Chill dough for at least an hour. Filling: 1 cup mashed potatoes, warm 1 cup shredded sharp cheese. A mix of cheddar and gouda is best. Combine mashed potatoes and cheese(s) in a big ol' bowl and set aside. (It's best to use fresh mashed potatoes but in a pinch those microwave ones work pretty well and can speed things along.) Filling Work the dough in halves. Roll to ~1/8" thick. (2 millimeters) Use a 2" circle cutter or cup/bowl of approx size to cut circles of dough. (FLOUR THE EDGE WHEN CUTTING FFFS) Spoon 1 - 1.5 tsp of the filling into each. Fold the dough over, forming a pocket. Pinch the edges to seal and then seal again with a fork. To cook 2 steps 1.) boil a few at a time until floating (leave room in the pot so they can rise without too much trouble) 2.) Heat some butter in a pan on medium heat and place drained pierogi in the pan. Cook until golden brown and crisp. Serve with green onions, sour cream or caramelized onion or bacon onion jams and a good wheat beer.
